Tuna Salad is still a delicious food to eat on a bed of lettuce, in a sandwich or grilled as a panini. We do not consume Tuna as often as we once did because of the high levels of mercury now found in this sweet and firm fish.
We like it best as shown, but the fish is easy to break down with a fork for more spread-ability on sandwiches or crackers. Try it open faced on a crusty slice of sourdough bread for a healthy afternoon treat or as pictured for a company luncheon.
For 6-8 Servings:
2# Tuna, grilled medium
1 Onion, sweet if possible
2 Celery Stalks, sliced in half lengthwise, then finely chopped
1-2 Apples, Gala or other sweet apple, diced, skin on
1/2 C Craisins
1/2 C Pecans, well chopped
For the Dressing:
1/2 Veganaise, or other non-dairy Mayonnaise substitute
1/2 - 1 tsp Celery Salt
1/2 tsp Pepper, we use White Pepper but Black is fine
Preheat Grill on high heat. Rub a small amount of Veganaise in the palm of your hand and massage it on both sides of the Tuna. Lightly salt and pepper it. Turn grill down to medium high and cook the fish approximately 3-5 minutes per side, until medium rare. It will continue to cook as it rests so be careful not to get it overdone and dry. Cut into medium dice-sized bites. If using as a spread, take your fork and flake the Tuna.
Mix the Veganaise and seasonings in a small bowl. Taste. Taste. Taste. Now is the time to correct the seasonings.
Note: once I became distracted and added both celery salt and salt to the dressing, then mixed it in with the Tuna without tasting first. It was impossible to fix or use and I wasted about $25.00 and my time PLUS I had to think up something else to prepare. Be warned!
Place your chopped Tuna, Apple, Onion, Celery, Craisins and Pecans into a large bowl. Pour the Dressing over the top and mix gently with your hands until it is thoroughly coated.
Note: If making a Tuna Spread make certain that you finely dice the Apple
This Tuna Salad is such a tasty dish that you can easily modify to your own taste preferences. We have made this successfully with a teaspoon of Curry and served it in a Stuffed Tomato. Delish!
